108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
2-compartment sink only is provided for warewashing. Please provide automatic commercial dishwasher in addition to 2-compartment sink or replace with 3-compartment sink. Until changes have been made, provide temporary set-up with large container full of sanitizer solution (e.g. 100 ppm chlorine) to ensure appropriate sanitation.
