Observation: The desert cooler is not cold enough to keep foods at or below 4C.
Corrective Action: Discontinue using this unit for the storage of potentially hazardous foods until it is capable of maintaining a temperature of 4C or less. Alternatively, replace this unit.
105  Critical Repeat Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
Observation: There were a number of potentially hazardous foods being stored at room temperature during lunch rush with no means of ensuring temperature abuse is being avoided.
Corrective Action: All potentially hazardous foods must be stored at or below 4C or not allowed to sit above 4C for more than 2 hours. This includes eggs (whole), liquid eggs, and hollandaise sauce. Ensure that items which are brought out during lunch rush are labeled with a time sticker and discarded at 2 hour mark.
108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Utensils used during food service were being stored in an insert filled with water.
Corrective Action: Utensils should never be stored in plain water, either store them dry, or keep them in a solution of 200ppm quatz or 100ppm chlorine.

Comments:

This facility has a food safety plan and sanitation plan in place.
All temperatures met regulatory requirements - with the exception of the desert cooler.
Staff appeared to be handling foods in a safe and sanitary manner.
There was one person on site with Foodsafe level 1 Certification
General sanitation was satisfactory
All refrigerators have thermometers
Dishwasher was achieving adequate sanitization
Food storage was acceptable
There were no signs of pests during inspection
