Observation: There were several boxes and buckets of food on the floor in the walk-in cooler.
Corrective Action: All items must be stored on shelves at least 6 inches off the floor, including boxes and buckets.

Comments:

General Observations:
1. All temperatures met regulatory requirements (fridges <4C, hot holding >60C, freezers <-18C).
2. Dishwasher final rinse cycle tested 50ppm chlorine, quat sanitizing spray bottles tested 200ppm.
3. All refrigeration units equipped with thermometers, temperature logs are up-to-date.
4. No cross-contamination issues with food storage, all items dated.
5. General sanitation was acceptable.
6. Ventilation system servicing is up-to-date, next service due March 2013.
7. Time sticker system in place for 2 hour holding of sushi rolls.
8. At least 1 person on site at time of inspection with Foodsafe Level 1.
9. No signs of pests noted during today's inspection.
10. No issues noted with food handling.
11. Hand washing stations equipped with liquid soap and paper towel.
12. Washrooms clean and supplied with soap and paper towel.
