Food and clutter has accumulated underneath and cannot be easily cleaned. Corrective Action: All surfaces must be smooth, non-porous, easily cleaned and non-slip. This wooden area must be re-surfaced to meet these requirements. |

Comments:
1. Dishwasher final rinse cycle achieving adequate concentration of chlorine for sanitization.
2. All temperatures met regulatory requirements. *NOTE* Some of the inserts in prep lines did not fit correctly. In order to maintain foods at the correct temperature during times when the lid is open, ensure that all inserts are correctly fitted at all times.
3. Thermometers noted in all coolers.
4. Temperature logs were up-to-date.
5. Ventilation system recently serviced - next service due July 2011.
6. Facility has a pest control program in place - no signs of pests noted during inspection.
7. Hand washing stations were equipped with soap and paper towel dispensers - all well stocked except soap in dispenser next to ice machine.
8. Sanitizing solution in spray bottles tested 200ppm quat.
9. Glasswasher in bar area tested 12.5ppm iodine.
10. Food storage was acceptable - all foods covered and dated. No cross-contamination issues noted.
11. General cleaning and sanitation in the kitchen was satisfactory. Further work is required in hard-to-reach spaces. Cleaning and sanitation behind the bar was acceptable.
