Corrective Action: Foods should never be stored on crates in front of the hand washing sink because staff have to lean over the food to wash their hands and wash water can easily splash onto and contaminate foods. |
112 | Poor Sanitary Design, Construction, Installation of Equipment & Utensils Observation: Bare wood was observed in the kitchen as a mounting bracket for shelves used to store foods. Corrective Action: All surfaces in the kitchen must be smooth, non-porous and easily cleaned; bare wood must be sealed. |
113 | Improper Sanitary Facilities Observation: Both hand washing sinks (next to grill and in dishwashing area) were obstructed by crates or mobile shelves during the inspection. Comments:
General Observations:
1. Hand washing sinks were equipped with liquid soap and paper towels.
2. Dishwasher sanitizer tested 50ppm chlorine, test strips kept on site.
3. Quat sanitizer used for food contact surfaces tested 200ppm, test strips kept on site.
4. Adequate number of staff are Foodsafe Level 1 trained.
5. All temperatures met regulatory requirements at time of inspection.
6. Thermometers present in all coolers.
7. Temperature logs were filled out and up-to-date as per Food Safety Plan.
8. All foods in coolers were covered and protected from cross-contamination.
9. No issues noted with dry storage.
10. No signs of pests during inspection.
