Comments:

Follow up inspection. This inspection was done to review the cleaning checklist and the effectiveness of the fruit fly control measures.

A cleaning checklist has now been developed by the operator. The cleaning checklist however does not include an adequate cleaning frequency for the line coolers and frequently touched areas near the cooking line where most of the previous cleaning/sanitation related health violations were observed.

The operator advised to amend the cleaning checklist to include frequent cleaning and sanitizing of the frequently touched areas on the line coolers exteriors.

The door handlers and line cooler exteriors must be first washed with a detergent, then rinsed with potable water and then sanitized using 200 ppm quat solution.

At the time of this inspection, no fruit flies observed in the bar area. A reassessment will be done during spring/summer season. Should the fruit fly problem reappears in spring/summer, the operator must start doing drain treatments and other fly prevention measures.
