Staff must not work alone without direct supervision by FoodSafe food handler or must have FoodSafe themselves.
Soap and paper towels at hand sink. Good temperature records kept for coolers and hot dog cooking temperatures. Fridge temperatures good. Hot holding cheese at >60°C. Held above 60°C for maximum 5 days then tossed. Sanitizer dispensing at 200 ppm quat. Pest control monitoring in place. Note: Inside of ice machine requires cleaning.
