|108||Critical Improper Cleaning, Sanitizing of Equipment and Utensils|
The dishwasher rinse cycle was not reaching 82 degrees C(or 71 degrees C at the plate). This machine cannot be used until the machine is adjusted/repaired. The maintenance company was called during the inspection. Any ware that is washed in machine must be manually sanitized in a sink with 200 ppm chlorine solution.
|110|| Food Not Protected - General|
1. Utensil bin had food debris in it, please clean and sanitize routinely. 2. The bag lining the flour bin is degrading, please replace the liner routinely.
|116|| Improper Construction / Maintenance of Establishment|
1. Floors behind the floor stand mixer and under pop cooler have food build up. Please clean this area. 2. Faucet for sink near back door is no longer sealed to counter top-please repair to prevent water damage or further issues with faucet.
|Raw meats stored below other foods in walk-in and prep cooler. All cold storage temperatures were satisfactory. Hand wash supplies were available and staff were observed washing their hands. Glasswasher sanitize cycle contained 25 ppm iodine. Staff observed in clean outer garments and hair was restrained. NOTE: Foods are reheated to a boil before being placed in the hot hold unit. One of the meat sauces was at approximately 45 degrees C. The food handler took it out of the unit to reheat to more than 74 degrees C before restocking it in the hot hold.|
