110   Food Not Protected - General
(1) Frozen Food observed thawing at room temperature -> at 1 degree C during inspection. Ensure frozen products are thawed in the cooler. (2) Keep ice scoop in food grade container, not in ice machine. Also ensure ice machine is cleaned and sanitized regularly as some mould/scum was observed.
116   Improper Construction / Maintenance of Establishment
Cold storage units require regular cleaning and sanitizing. Accumulation of food debris noted in some units.
118   Food Safety Plan/Sanitation Plan
Food Safety Plan and Sanitation Plan need to be updated/developed to reflect restaurant and catering operation and must be accessible on-site.
Comments
Handwashing stations equipped with handsoap and paper towels. Coolers holding <4 degree C / Hot holding >60 degree C / Freezers <-18 degree C. Ensure cold storage units are equipped with thermometers. Ensure temperature logs are being maintained daily and keep recent records on site. High temperature dishwasher required ~4 runs to reach a sanitizing rinse cycle >7 degree C at plate level. Will need to run machine a few times to ensure dishes are sanitized adequately. Bleach sanitizer solution 200 ppm. Ensure wiping cloths are stored in sanitizer solution. Ensure foods are cooled from 60 degree C -> 20 degree C within 2 hours; 20 degree -> 4 degree C within 4 hours. Ensure at least one person on shift with valid FoodSafe. EHO discussed FoodSafe expiration.
