Temperature records are not up to date. Record cooler/fridge temperatures daily. Observed a spray bottle with orange liquid unlabelled. Label all chemical containers.
Food safety observations: good hand washing, frequent hand washing. Very little to no handling or ready to eat foods required for pizza service. Pizza only kept in display warmer for 1 hour. Cleanliness is good throughout kitchen. Quat sanitizer is at 200-400ppm, please use this sanitizer on cutting board handles, counters throughout the day (every 2-3 hours). Please send a copy of your food/sanitation plan to the EHO.
