111   Poor Hygiene and Activities of Food Handlers
Do not return soiled dishes to the front food prep area. Separate and recycle at the recycle table only. Ensure employees wash and dry their hands prior to putting on food gloves.
116   Improper Construction / Maintenance of Establishment
Operator to notify this office by telephone once the refrigeration units have been serviced.
118   Food Safety Plan/Sanitation Plan
Purchase a digital stem thermometer and keep a bottle of water in each refrigerator to enhance daily temperature checks.
Overall premises is well maintained. Manual ware washing procedure is correct. Quat sanitizer bucket concentration is correct at 200 - 400 ppm. All protective temperatures meet Health requirements with the exception of refrigeration numbers (5.6°C) and the front sushi display case (7.4°C). Both units are schedule for servicing this afternoon.
