Purchase a digital stem thermometer and keep a bottle of water in each refrigerator to enhance daily temperature checks.
|Overall premises is well maintained. Manual ware washing procedure is correct. Quat sanitizer bucket concentration is correct at 200 - 400 ppm. All protective temperatures meet Health requirements with the exception of refrigeration numbers (5.6°C) and the front sushi display case (7.4°C). Both units are schedule for servicing this afternoon.|
