Food Safety and Sanitation Plans must be available.
Refrigerators in kitchen/prep area all observed at less than 4 degrees C. Hot held rice and soup at more than 60 degrees C. Acidified sushi rice is thoroughly mixed to ensure it is a uniform mixture. Observed the cooking of raw beef dish, meat is very thinly sliced and thoroughly cooked. Udon noodles are `cooked from frozen, no thaw step. Hand wash supplies are accessible at a designated sink. Staff observed in clean outer garments and hair restraints. Staff observed wearing gloves while handling sushi rolls. Temperature records are available. Facility follows three sink method for ware washing *Present during lunch rush, display cooler was at more than 4 degrees C. Please adust cooler to ensure the unit remains at less than 4 degrees C at all times*
