Deli slicer is damaged, handle wrapped in tape which makes it difficult to properly clean and sanitize. Cleaning needed in dry storage area clean bulk bins and remove food debris from chest freezer.
High temperature dishwasher measured at greater than 180°F on rinse cycle. Temperatures are being monitored and recorded. All refrigeration units are operating at correct temperatures. Chlorine sanitizer measured at greater than 200 ppm.
