A soiled wiping cloth was found on the cook line prep table. Store wiping cloths in sanitizer solution in a wiping cloth bucket. This was corrected at the time of the inspection.

The staff restroom paper towel dispenser is not working. Repair dispenser.
|116|| Improper Construction / Maintenance of Establishment|
Ceiling lights are not working in the back food prep room and dry storage room. Replace bulbs. Electrical panel is open (wires are exposed) in the walk-in freezer and above the two-door freezer. Install panels. Light tubes are being stored behind the dough mixer. Store light tubes separately from food area. The hand sink backsplash requires recaulking to wall. Reinstall ceiling panels in kitchen. Cleaning is required in the following areas: floor under counter in the back room food prep area; mop sink area; bottom of bar cooler; soda pop dispenser end nozzle; filters in exhaust hood above grill/deep fryer. Thoroughly clean and sanitize. Exhaust hood filter is damaged above the grill/deep fryer. Replace or repair filters. Clean.
|Correct all items above for the follow-up inspection in one week, on November 28, 2018. Coolers are at 4°C or lower. Hot holding unit is at 60°C or higher. Dishwasher final rinse sanitizer concentration is at 100 ppm chlorine. Sanitizer concentration in spray bottle is at 200 ppm Quat.|
