108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Sanitizer solution was weak, please mix fresh solution with just bleach and water to more than 200 ppm. Ensure a solution is also available in the front food prep area.
Cold storage temperatures were satisfactory. One cooler is broken but is only being used to store non-potentially hazardous foods. Dishwasher sanitize cycle was more than 71 degrees C at the plate. Hot held soups at more than 60 degrees C. Meats are probed with a thermometer to monitor cooking temperatures. Dry storage foods are stored up off the floor. NOTES: 1. Extra cleaning needed under bucket storage, bucket lids, non-food contact portion of deli slicer, and ice cream scoop storage cup.
