The pizza and pasta coolers were observed at 5-6 degrees C. Please adjust these coolers so they maintain less than 4 degrees C.

Corrected During Inspection: The hot held foods were observed at approximately 54 degrees C. These were reheated during the inspection and observed in the hot hold unit at more than 60 degrees C. These are heated to a boil before hot holding.

|Hand wash supplies are available at an accessible sink. Dishwasher sanitized at more than 71 degrees C. at the plate. Walk-in cooler, salad prep cooler, and stand-up cooler at less than 4 degrees C. Freezer temperatures were satisfactory. Gravy being cooled was placed in an ice bath. Raw meats are stored separate from ready-to-eat foods. No signs of pest activity.|
