Raw beef was found defrosting at room temperature. Foods should be defrosted in the cooler or under cold running water.
106  Critical Inadequate Hot Holding Temperature of Potentially Hazardous Food(s)
Hot holding of precooked chicken and beef was 49°C. Ensure hot holding is capable of holding foods above 60°C. food must be reheated above 74°C before serving.
108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
High-temperature dishwasher had no soap. Dishes must be cleaned before being sanitized.

Reseal once behind sinks to remove the build-up of mildew.

Comments
All fridge temperatures measured less than 4°C. Dishwasher measured above 74°C at plate surface. Quat solution measured 200 ppm. Hand sinks were equipped with soap and paper towel. Note: More bottles of sanitizer should be available.
