Alleged Food Borne Illness Complaint. Complainant indicated ate take-out food (wonton soup) on August 15, 2018; after eating food three hours later became ill. Spoke with operator: no other related complaints past week - no staff illnesses. No equipment or food supply issues. Served over 20 wonton soup orders each say. Observations: Broth at 85°C; wonton at 76°C. Cook/reheat temperatures. Wonton in cooler at 4°C; wonton prepared every day. Hand sink well equipped; sanitizer (bleach) available. Food handling and hygiene acceptable. Dish machine sanitizing properly 100 ppm chlorine final rinse. Cooling - ensure cooked wonton are cooled rapidly to 4°C within four hours. Keep hot food 60°C or higher and cold foods 4°C or lower.
