There is a gap between the splash guard and the wall at the dishwashing sink. Clean old caulking. Re-caulk (seal) the gap. There is protective plastic film on the ice machine. Ice machine has a rough surface. Remove plastic.
|Coolers are at 4°C or lower. Hot holding units are at 60°C or higher. Temperature logs are up to date. The dish machine final rinse sanitizer temperature is above 180°F. The overall facility is clean and well organized. The walk-in cooler has additional shelving. Spray bottles are labelled. The wall has been repaired (covered).|
