Cooler temperatures are at or below 4°C. Temperature logs are maintained daily. Dishwasher rinse sanitizer level is at 50 ppm chlorine. Spray sanitizer level is at 300 ppm QUATS. Good organization is noted in the coolers and dry storage area. Soap and paper towel are available at the dishwasher area. Install soap and paper towel dispensers in immediate vicinity of hand sink. Accumulation of debris is noted under the equipment in the kitchen. Thorough cleaning in this area is needed. Seal any openings and holes in walls and floor to prevent the entrance of pests.
