Rear door has openings for rodents. Provide adequate weather stripping (rodent proofing) at rear door.

Rodent droppings were observed behind and under equipment, etc. Deep cleaning is required under equipment on shelves, etc. The wooden prep counter is cracked; food debris was lodged in crack. Replace counter. Dishwasher is under repair (currently being serviced). Use the three-step dishwashing method until repaired.
|Cooler temperature was 4°C. Viper sanitizer measured 500 ppm. Daily temperature records are being kept.|
