Routine inspection conducted today. Facility is clean and well maintained. All cold holding protective temperatures are in compliance with the Health requirements ≤ 4°C. Mechanical ware washer is properly reaching sanitizing temperature of 82°C, measured at the manifold. Protective temperature records are up-to-date. 200 ppm quat surface sanitizer is in place. No concerns identified at the time of the inspection.
