Cleaning needed around fans in walk in cooler, ceiling to remove debris, inside dishwasher.
Temperatures are being monitored and recorded. Hot holding measured at greater than 60°C. Low temperature dishwasher chlorine sanitizer measured at 50 ppm. Quat sanitizer measured at 200 ppm. All refrigeration units are operating at correct temperatures.
