108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Thoroughly clean and sanitize cupboard doors and refrigerator handles. High temperature dishwasher is not sanitizing adequately. Ensure at least 76 °C is reached at plate temperature. In the interim, use the "three compartment sink method".
110   Food Not Protected - General
Remove all non-food related items from the food preparation area.
116   Improper Construction / Maintenance of Establishment
Refinish water damaged ceiling to ensure a smooth impervious and easily cleaned surface.
