Refrigeration temperatures are correctly monitored. Hand-washing and utensil-washing practices are correct. Dishwasher operation is correct. Food storage and protection practices are correct. This premises is found to be clean and well organized. NOTES: We note that the screened opening above the delivery door requires further pest proofing. Please revise your procedure in the preparation of gravy to reduce the cooling time of finished product, as discussed.
