Comments
All refrigeration temperatures at 4°C or less. All hot holding temperatures at greater than 60°C. All freezer temperatures at -18°C or less. All temperatures recorded on monthly log sheet. Dishwasher operating at 100 ppm chlorine. Quats sanitizer solution in place at 200 ppm. Overall sanitation and maintenance of facility is good. Note: Hand sink by ice well needs to be fastened and sealed around rim (caulked).
