Cold storage temperatures were satisfactory. Please ensure the display cooler is pre-chilled before stocking with sushi. Hot soup at more than 60 degrees C; Rice at more than 60 degrees C. Raw meats for teriyaki dishes are handled with designated tongs. Sushi rice is prepared with sugar and vinegar. California roll filling is prepared and used up within 1-2 days, good stock rotation of all foods. Hand wash sink stocked and accessible.
