Observation: The grates covering the make-up air supplies are in need of cleaning.
Corrective Action: Include these as part of routine cleaning schedule.

Observation: The edge seal is coming loose above the wood panel covering the passthrough (back side of grill) creating gaps that are difficult to clean.
Corrective Action: Re-seal all moldings.

Corrective Action: Pull out old caulking and re-seal.

General Observations:
1. The ventilation system will be due for service in May.
2. The backflow preventers are all due for annual checks by a qualified person.
3. All temperatures met regulatory requirements.
4. Temperature logs for coolers and dish washer were up-to-date.
5. Food handling was observed during inspection - no concerns.
6. No signs of pests, pest control program in place.
7. Sanitizer concentration tested 200ppm quatz.
8. All food stored to protect from contamination.

Planned Upgrades:
1. Ceiling tiles
2. New shelving for walk-in cooler
3. Stainless counter top next to smokers and under turbo chef
4. New glass washer for downstairs bar

Information Requested:
1. During extended periods on non-use, the draft beer lines servicing the upstairs bar should still be routinely flushed/cleaned. Please provide a brief explanation of cleaning/maintenance schedule.
