505   Food premises maintained in a sanitary condition (Sec 17(1))
Observation: Premises contained much unnecessary clutter and filth at the time of the inspection. This included storage and food prep areas.
Corrective Action: The operator agreed to remove unnecessary clutter and clean premises. Additionally, operator agreed to be more diligent with cleaning and maintaining a clutter free premises in the future.
507   Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: Mechanical dishwasher was not sanitizing properly at the time of the inspection. It was < 50 ppm chlorine.
Corrective Action: The mechanical dishwasher must be able to reach at least 50 ppm chlorine in order to sanitize properly. The operator called the technician right away so that the dishwasher could repaired. A follow up was arranged to ensure compliance.

Comments:

Handwashing basins contained soap and paper towel and we accessible for use to the workers.
Sanitizer was quats and was found to be at a concentration of > 200 ppm.
All protective temperatures met health requirements.
