Comments:

This inspection was done at the request of Tom Akama, the owner/operator of this facility. Suiki-Ya-Sushi located at unit # 109 7433 Frontier St has now been closed and the business is relocating to the unit # 109 Frontier St.
The layout of the facility is according the approved plans. However, a lot of unfinished construction work is needed to be completed before a permit can be issued. Following is the list of items given to the operator:
- The wooden screen door in the back of the facility needs to be refinished and this door needs to be installed on the back exit door.
- The floor throughout the facility needs to be thoroughly cleaned.
- The baseboard needs to be sealed all across the facility.
- The exposed plumbing in the staff washroom needs to be covered up and sealed. Replace/remove the wooden shelf in the staff washroom.
- Additional dry storage shelves needs to be provided. No food containers on the floor.
- Splash guard required behind the dishwasher.
- Splash guard required behind and around the mop sink.
- The walk in cooler needs to be repaired and must maintain less than or equal to 4 degree Celsius.
- All the refrigeration equipment must be running at less than or equal to 4 degree Celsius.
- Thermometers required in all the refrigeration units.
- A probe type thermometer required to take internal food temperatures.
- The dishwasher must provide >50 ppm chlorine in the rinse cycle. Chlorine test strips must be provided to monitor sanitizer concentrations.
- Remove any items not required for the day to day operation of the facility.
- Wash and sanitize all the food contact counters and fridge interiors.
- Replace the paper towel dispenser in the women washroom.
- Provide soap and paper towels on all the hand washing stations in the kitchen.
- Cover exposed plumbing and electric cables in the kitchen.
- Refinish the wooden counter in the kitchen.

An updated food safety and sanitation plan is required.

A follow up inspection requested by the operator for 15th Feb.
