Observation: There is extensive use of storing food on ice at the food prep stations.
Corrective Action: This is an unnecessary and poor practice and does not store food at an acceptable temperature. It should be ceased immediately.

Observation: There are varied temperatures throughout the hot side cold line drawer fridge and many of the drawers do not close securely and interfere with each other.
Corrective Action: This equipment should now be repaired to ensure a maximum temperature throughout of +4C.

Observation: At the time of the inspection the food slicer was in need of cleaning. After being cleaned it was still substantially in need of cleaning.
Corrective Action: The food slicer should routinely and regularly be thoroughly cleaned and staff should be trained in the cleaning procedure for this equipment. The food slicer was recleaned to a satisfactory standard.

Observation: Thawed and prepared potentially high risk food products are not being consistently covered and day/date labeled.
Corrective Action: For food protection, good stock control and food status awareness this should be consistently carried out.

Corrective Action: These areas should routinely be cleaned to prevent attraction of pests.

Corrective Action: The Plumbing Inspector should be consulted for cross connection protection advice and application of permits.
