The following items are still not addressed:
- The front display case has not yet been repaired. Temperature of this display case measured 10 degree Celsius. The operator has started using this display case to store the potentially hazardous sandwiches without getting it repaired. The operator asked to remove all potentially hazardous items from this fridge. DO NOT use this display fridge until it is repaired. Failing to keep food at the safe storage temperatures may result in a $345 violation ticket.
- As per information provided by the operator, the mechanical dishwasher has been repaired. However, the machine could not be tested because its wash cycle is too long ( the wash cycle did not finish in 30 minutes). The operator advised to contact the mechanic to fix this problem. The operator to carry on sanitizing all the dishes in the 100 ppm bleach solution after running through the dishwasher.
A follow up inspection is required.
