Observation: Cleaning required around the exhaust hood and the dough machine.
Corrective Action: Increase the frequency of cleaning around these areas.

Observation: There is no staff with food safe level 1 training to cover in the absence of operators.
Corrective Action: There must be at least one person with food safe level 1 training working on site all the times.
507  Critical Repeat Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: The dishwasher has not yet been repaired.
Corrective Action: The mechanical dishwasher must be repaired to provide minimum 71 degree Celsius rinse temperature on the dishes.

Comments:

Follow up inspection.

The following items from the previous routine inspection report have now been corrected:

- The front line cooler has been repaired and is running below 5 degree Celsius.
- Some cleaning has been done on the walls around the pizza oven.


The following items still needs to be corrected:
- The dishwasher has not yet been repaired. The operator reminded about manually sanitizing all the utensils after running through the dishwasher. Failing to correct this violation may result in $230 violation ticket.
- Operator has not yet started washing and sanitizing the pizza display trays after each use. This must be corrected immediately. Failing to correct this violation may result in a $230 violation ticket.
- An additional back operator up with foodsafe level 1 certification is required.
- Cleaning still required around the dough machine and exhaust hood.

A follow up inspection is required.
