Corrective Action: Good separation to prevent the risk of cross contamination should be carried out at all times.

Corrective Action: These should be strictly controlled to ensure good temperature control and vinegar concentration to control bacterial growth.

Observation: Foods were being kept within the line coolers at elevated temperatures, noted at up to +27C.
Corrective Action: Foods must be stored at +4C or less.

Observation: The pasty line fridge is operating at elevated temperature.
Corrective Action: This should now be repaired.

Observation: The dishwasher maximum temperature during the sanitizing cycle was noted at +62.6C.
Corrective Action: The dishwasher should reach at least +71C during this cycle. This should now be repaired and alternative means of sanitizing carried out whilst awaiting repair.

Observation: No sanitizer was noted at the mid station glasswasher final rinse.
Corrective Action: This should now be repaired to ensure adequate concentration of sanitizer is available to prevent the risk of cross contamination.

Observation: Many of the reach-in refrigerator door edge seals are in disrepair.
Corrective Action: These should now be replaced.

Observation: The walk-in freezer is frosted and there is a build up of ice on the ceiling, floor and food shelving.
Corrective Action: This should now be repaired.

Corrective Action: To prevent risk of cross contamination, water should be directed to the exterior of the fridge to drainage.

Comments:

General; the door electrical interlock for disabling the freezer fan on opening was not working, this should be investigated and repaired to prevent risk of injury from freezing of persons trapped within the freezer. Additional lighting provided in this area would benefit cleaning.
