Observation: Some of the laminate edging on the microwave shelf has broken off leaving porous wood exposed.
Corrective Action: All surfaces must be smooth, non-porous and easily cleaned.

Observation: The storage wells in the counter on either side of the dairy fridge along the back wall have been covered with hard plastic and tape. There is also a 1/2 inch gap between the counter and cooler that is accumulating food debris and cannot be easily cleaned.
Corrective Action: All surfaces must be smooth and easily cleanable. Taped plastic panels must be removed and replaced with a more durable and cleanable solution. Gaps that trap food which cannot be easily cleaned must also be sealed.

Observation: There is a 3 foot section of flooring that is not properly sealed to the wall with coving at the end of the bistro. As a result food debris has started accumulating in the crack between the new flooring and the wall.
Corrective Action: Proper coving must be installed that seals the floor the wall to prevent accumulation of food and facilitates cleaning.

General Observations:
1. All temperatures met regulatory requirements.
2. Thermometers noted in all coolers.
3. Temperature logs were up-to-date.
4. Sanitizer bucket tested 100ppm chlorine.
5. Quat spary bottles tested 200ppm.
6. All food storage acceptable, foods covered and dated.
7. Foodsafe Certified staff on site.
8. Sanitation was acceptable.
9. Hand washing station equipped with liquid soap and paper towel.
10. Ventilation system servicing is up-to-date.
