A sanitation plan is also required - to outline cleaning and sanitation procedures. This must also include provision for monitoring dishwasher temperatues and refrigerator temperatures. We note a new Hobart dishwasher system has been installed, new convection oven, repainted kitchen, new ice machine, shelving, etc. Please ensure water samples are submitted once per month for each water treatment system. |
