507 | Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2)) Observation: Utensils that are washed and sanitized at the mobile cart are not going through a proper sanitizing step. Corrective Action: Ensure that all utensils are washed first using soap, rinsed, then sanitized by fully submerging and soaking in a 200ppm quat solution for 2 minutes (or length of time specified by chemical manufacturer). Sanitized items do not need to be rinsed after sanitizing, just allow to air dry. |
