Observation: Several wiping cloths were lying idol/in use during the time of the inspection.
Corrective Action: Wiping cloths should be clean, restricted in use and stored in approved sanitizing solution when not in use. Sanitizing stations should now be provided and monitored in line with the sanitation plan.

Observation: The food slicer was in need of cleaning. The area directly beneath this equipment was also in need of cleaning.
Corrective Action: The food slicer should now and routinely be thorough cleaned after each period of use in line with the sanitation plan.
110   Food Not Protected - General
Observation: Temperature monitoring of fridges and hot hold food was being carried out inconsistently and filing of past recorded readings was ad-hoc.
Corrective Action: Consistent monitoring and recording should be carried out in line with the food safety policy and past results filed for at least 3 months and available for inspection on request.

Observation: The Foster freezer adjacent the deep fat fryers was noted at -13C.
Corrective Action: This equipment should be adjusted/repaired to ensure a minimum temperature of -18C.

Observation: Food was being stored on the floor of the dry food store and being used as a door stop.
Corrective Action: This practice should cease and food should be stored off of the floor.
113   Improper Sanitary Facilities
Observation: Back flow preventer valves and water filters were provided within the facility.
Corrective Action: Filters should be date labeled and replaced routinely and testable back flow preventer devices should be tested annually and labeled. The facility should be assessed to ensure adequate cross connection protection devices are installed. The Municipal Plumbing Inspector will require permit applications for testable devices.

Observation: The floor of the walk-in cooler and the walk-in freezer was in need of cleaning.
Corrective Action: This should now and routinely be carried out.

Observation: The floor drain of the Wood Room was blocked with debris.
Corrective Action: This room had two reach-in fridges and is being used as a food storage area for Chic Pea and Ravens Next. This area is not equipped for food storage in that it does not have cleanable surfaces and is also used as a storage area for unnecessary equipment and articles. A partitioned clean storage area should be provided and approved or this area should not be used for food storage.

Observation: The shelves of the reach-in fridges located in the Wood Room were rusty.
Corrective Action: The shelves of this equipment should now be sealed/replaced leaving surfaces smooth and cleanable.

Corrective Action: These should now be cleaned.

Corrective Action: These should now be repaired.

Corrective Action: This should now and routinely be cleaned in line with the sanitation plan.

Corrective Action: This area should now and routinely be thoroughly cleaned in line with the sanitation plan.

Observation: At the time of the inspection the glass washer was noted completely dry of detergent. It was not in use at the time of inspection.
Corrective Action: The glass washer should not be operated without cleaning/sanitizing chemicals.
