108 | Critical Repeat Improper Cleaning, Sanitizing of Equipment and Utensils Observation: The dishwasher is not sanitizing at 82 Degree Celsius at the manifold. The final rinse temperature as measured by using the maximum registering thermometer is measuring at 68.5 Degree on the dishes. It should be more than 71 Degree. The gauge on the dishwasher is not accurate. Corrective Action: The dishwasher must be fixed to get >82 Degree Celsius at the manifold all the times. Please investigate the reason of not getting the proper sanitizing temperature. Install an accurate temperature gauge on the dishwasher and start monitoring and recording the final rinse temperatures. In the meantime all the dishes must be sanitized manually in the 100 ppm bleach solution after running through the dishwasher. |
