Violations:
A summary of the violations found during the inspection are listed below.

507  Critical Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: One of the bar glass washers is not providing any detectable sanitizer in the rinse cycle.
Corrective Action: Repair the bar glass washer. It must provide minimum 50 ppm chlorine in the rinse cycle. Do not use this glass washer until repaired.
513   Refrigeration and hot holding equipment has accurate thermometers (Sec 19(2))
Observation: Thermometers missing in some of the refrigeration units.
Corrective Action: All the cooling units must have its own thermometer.
604   Adequate handwashing stations at convenient locations are available for employees (Sec 21 (4))
Observation: Paper towels not restocked at the hand sinks in the kitchen. The paper towel in the dispenser on the oyster bar is stuck.
Corrective Action: Provide soap and paper towels on all the sinks.

- Freezer temperatures -18 degree Celsius or below.
- Temperature logs being maintained.
- High temperature dishwasher reached 71 degree Celsius on the dishes.
- One of the glass washers providing >50 ppm chlorine sanitizer in the rinse cycle.
- 200 ppm quat sanitizer available out of sanitizer dispenser.
- No signs of any pest infestation.
- Food safe certified food handlers available.
- Food storage practices are satisfactory.
- Food handling practices appear to be satisfactory.
- General maintenance is satisfactory.
- VCH raw oyster advisory available on the menu.
- Shellfish tags being maintained.

Note: The kitchen dishwasher reached 71 degree Celsius temperature but it took a significant running time to get this temperature on the dishes while the final rinse gauge is indicating a temperature of well above 82 degree Celsius on the manifold. The operator to get the dishwashing machine serviced to ensure that it is running as intended.

A follow up inspection required to verify glass washer repairs.
