Observation: All potentially hazardous foods are not stored under refrigeration (4ºC / 40ºF or less ).
Corrective Action: Cold line refrigeration unit not maintaining food below 4 degrees C must not be used for storage of high hazard food items for periods exceeding 2 hours and unit requires repair.

Comments:

This inspection was a follow up to that dated November 1st, 2005. The main dishwasher is still undergoing work; banquet kitchen dishwasher being used as back up.
