No violations were found during the inspection

Comments:

The following items have been completed since yesterday:

1. Hot water restored to facility.
2. New compressors on order for both line coolers - to be installed Dec10, 2010.
3. Leak in the gasket connecting flexible supply tube to water line in dish pit has been repaired.
4. Faucet over 2 compartment sink in dish area has been repaired.

Outstanding critical items:
1. Dishwasher still not achieving adequate concentration of sanitizer during final rinse.
2. Glass washer still not achieving adequate concentration of sanitizer during final rinse.

This facility has been granted permission to re-open under the following condition:
A manual sanitization step is required following all dish and glass washing whereby dishware is soaked for 2 minutes in 100ppm chlorine. A follow-up inspection will be conducted tomorrow to verify that both machines have been correctly calibrated to deliver an adequate dose of sanitizer.

The following items will be completed within 2 weeks (by December 23, 2010):
1. Duct tape to be removed from interior edge of bottom drawer in salad station.
2. Metal inserts for salad station are on order and will be in place.
3. Furry mats in dry storage to be removed.
4. Fluorescent lights to be fitted with shatterproof covers.
5. Caulking to be applied in all affected areas.

The following items must be completed before the next routine inspection in spring 2011:
1. Flooring re-sealed in dry storage area.
2. Rotting wood at pass between bar and kitchen to be repaired.
3. Laminate counter repaired.
