Comments:

Operating conditions for this facility remain the same as in previous annual inspection reports:
All foods and drinks served in the Pacific Suite are prepared in the Dubh Linn Gate Pub and transported upstairs during events. There is no food processing in the Pacific Suite. The service area has coolers which are only used to store condiments, pre-packaged drinks and extra foods during events.There is also a small adjoining service room equipped with a sink and dishwasher that is not used. The sink provides soap and paper towel for handwashing. Dubh Linn staff do the general set-up and take-down of food services, housekeeping looks after more general cleaning requirements (floors etc.).

Because there is no food processing that occurs in the Pacific Suite, it may be feasible to have the operating permit lifted. This was discussed with the manager of the Dubh Linn Gate at time of today's visit. If the operator would like to retain the permit, an updated standard operating procedure for the area is now required - which includes a food safety plan and sanitation plan.
