403  Critical Cold potentially hazardous foods are stored/displayed at or below 4 degrees C (Sec 14(2))
Observation: The air temperature in the bottom portion of the cooler is 10 degree Celsius. Temperature of the food surface also 10 degree Celsius. The operator advises that the temperature of this cooler in the morning was 4 degree Celsius.
Corrective Action: The line cooler must be repaired to ensure that it is able to maintain a temperature of 4 degree Celsius or below. This cooler should not be used to store any potentially hazardous foods for more than 2 hours. The food from the top potion of inserts relocated to the another fridge the time of this inspection. The operator also advised to not to use double inserts in the upper portion of the cooler. The operator is warned that failing to store food in a safe temperature zone may result in a $345 violation ticket and/or further enforcement action from health protection office.

Observation: A new display cooler has now been provided. This cooler running at 13 degree Celsius (air temperature) at the time of this inspection. Temperature of surface of food 13 degree Celsius.
Corrective Action: Repair/readjust the new display cooler to get a temperature of 4 degree or below. All the items from this display cooler relocated to the upright steel cooler at the time of this inspection. The operator is warned that failing to store food in a safe temperature zone may result in a $345 violation ticket or further enforcement action from health protection office.
