505  Critical Repeat Food premises maintained in a sanitary condition (Sec 17(1))
Observation: Sewage like substance/grease is leaking from the grease trap on to the dishwashing room floor. The leaking liquid has covered major portion of the floor in this room making it extremely slippery. Sewage odor also observed in the dishwashing room. Similar unsanitary conditions were observed in the dishwashing area during Oct 9th routine health inspection. The sewage leak has been left un repaired and appears to have worsened over time.
Corrective Action: Repair/service/replace the grease trap to fix the leakage. After the repairs are complete, the floor and other contaminated items in the dishwashing room must be washed and then disinfected.
507  Critical Equipment, utensils and food surfaces are washed and sanitized (Sec 17(2))
Observation: No detectable chlorine sanitizer observed in the mechanical dishwasher rinse cycle. The dishwasher is still splashing water through the door seal when running.
Corrective Action: The dishwasher must be repaired to provided minimum 50 ppm chlorine in the rinse cycle. Make sure that the dishwasher is being maintained according to the manufacturer's specifications and is not splashing around water when running. The operator must also provide chlorine testing strips and start monitoring and recording dishwasher sanitizer concentrations.

Comments:

Due to unsanitary conditions in the dishwashing room and inadequate ware washing/sanitizing facilities, this establishment cannot be run safely. Due to this reason a verbal closure order is being issued to the operator.

The operator must

Close this premises to the public until all required corrective actions have been completed in full and this department has provided authorization to re-open.
Repair/service/replace the grease trap so that no sewage is leaking on to the floor in the dishwashing area.
Clean and disinfect the floor in dishwashing area.
Repair the mechanical dishwasher to get minimum 50 ppm chlorine in the rinse cycle and also ensure that the dishwasher is running according to manufacturer’s specifications.
A written order to follow.
