Observation: Some temperature variances noted for the hot and cold holding temperatures - especially along display case lines. Ensure a systematic approach is developed to monitor and record all units at least once/day. Monitor dishwasher temps also. Provide suitable equipment for ice machines. Ensure adequate food protection for cookies/muffins.
116   Improper Construction / Maintenance of Establishment
Observation: Replace all damaged and missing ceiling tiles throughout - especially around dishwasher areas. Replace light diffusers also. Clean floor drains as required and ensure traps are primed. Secure wastewater lines from cooler condensate - recaulk.
