Observation: During the inspection a glass vessel was being used as an ice scoop instead of using the ice scoop provided and available within the ice sink.
Corrective Action: This practice should cease with immediate effect and the ice scoop used at all times.

Observation: (REPEAT): There is a kettle releasing grease laden water vapors into the kitchen atmosphere. There is also a steam oven releasing water vapors into the kitchen. These items of equipment affect air quality within the kitchen environment, visibly staining and damaging the ceiling above them and affect the overall sanitary condition of the kitchen.
Corrective Action: Section 4 (1) (h) of the Food Premises Regulation states "Every person who constructs or makes alterations to food premises must ensure that the food premises are equipped with ventilation equipment that is adequate to prevent the accumulation of smoke, grease, water vapor and objectionable odors". Adequate ventilation equipment must now be installed to control the release of grease and water vapors from these items of equipment.

Observation: Various reach-in fridge door edge seals are in disrepair and difficult to effectively clean.
Corrective Action: These should now be replaced.

Observation: Presently a timber top table is used as a 'smoker' table. The table is in disrepair and its surfaces are not easily cleaned.
Corrective Action: This table should now be removed from the kitchen or repaired leaving smooth, impermeable and cleanable surfaces.

Comments:
