302   One staff has Foodsafe in Operators absence (Sec 10 (2))
Observation: No staff on site had FoodSafe or equivalent training. Staff did not demonstrate adequate knowledge of food safety principles. Staff were not trained to know proper dishwashing procedures or proper protective temperature requirements (hot holding, cold holding etc).
Corrective Action: Staff must take FoodSafe training. To follow up with this, provide staff with FoodSafe training. Afterwards, confirm that one staff member at all times has FoodSafe training by providing a list of employees that have FoodSafe training.
404  Critical Hot potentially hazardous foods are stored or displayed above 60 degrees Celsius (Sec 14(2))
Observation: The hot holding unit for pizza was not turned on at the time of inspection. No plan is in place for either time or temperature control of pizza once it is cooked. Staff were not trained on hot holding or time control.
Corrective Action: Provide some sort of food safety plan for the pizza that does not involve letting it sit out for indeterminate amounts of time after it cooks. Follow-up inspection to be conducted at 3pm on November 13th. At that time, demonstrate how the pizza will be kept safe using either time or temperature controls.

Further violations related to improper hot holding of pizza will result in the issuance of a violation ticket. Follow up inspection to be conducted at 3pm on November 13th.
