110   Food Not Protected - General
Observation: a) Flour bags are being stored on the floor. b) Machine oil and some other non-food related items are stored on the top of pizza sheet out area where it posses a potential chemical or physical contamination hazard for the food.c) Left over pizza is being cooled down in a way that may not be suitable to achieve the safe cooling rates.d) Wiping clothes are not being stored in the sanitizer solution.
Corrective Action: a) Store all the foods at least 6 inches off the floor. b) Store all chemicals in a designated chemical storage area and away from the food. Keep the area above the sheet machine clean.c) The Left over pizza must be cooled down in the trays in not more than one pizza slice think layers. To use any alternate method of cooling, the cooling rates must be verified and documented.d) Store wiping clothes in an approved sanitizer solution.
116   Improper Construction / Maintenance of Establishment
Observation: a)Floor in the walk in cooler requires refinishing. There are bare wood surfaces both inside and outside of the walk in cooler. b) Ceiling tiles above the sheet out area are missing/displaced.
Corrective Action: a)Provide a new floor finishing with a non absorbent, easily cleanable surface. Target completion date 4 Dec,2009. b) Ceiling tiles must be replaced/installed to make the ceiling easily cleanable.
