Observation: Middle line cooler adjacent to grill is running at 7 degrees celsius at time of inspection.
Corrective Action: Adjust cooler so that it is below 4 degrees Celsius. Monitor this unit closely to ensure that it can maintain proper temperatures throughout the day. If this cannot be achieved, it must be repaired by a professional.
112   Poor Sanitary Design, Construction, Installation of Equipment & Utensils
Observation: Kitchen dry storage and cooler area does not have adequate flooring and the lighting is not adequate as noted during inspection.
Corrective Action: Ensure that the lights are turned on or new lighting is installed that can facilitate ease of cleaning in this area. The carpeted flooring is not adequate for a commercial kitchen. Ensure that flooring in refinished with a surface that is smooth, non-porous and easily cleanable.

Reminder to staff: ensure that only enough potatoes are taken out for 2 hours of service.

Premises otherwise generally well maintained. Dishwasher reaches 50ppm chlorine as required. Except where noted above, all protective temperatures meet regulatory requirements at time of inspection. Temperature logs are complete and up to date as required.
